Our Oils
Three types of organic, first-crush, cold pressed extra virgin olive oil are produced at ARCAVERDE:
● ARCAVERDE, a monocultivar oil made from a very old and rare olive cultivar, La Spezzanese, now found only on our land;
● VALLE DEI GINEPRI, a monocultivar oil made from the variety of olive known as Corniola;
● TON ARMON (Delle Rocce) oil, a blend made from local cultivars such as La Grossa di Cassano, la Tondina, la Dolce di Cerchiara, l'Olivella Cerchiarese.
We apply the most rigorous regulations for organic agriculture on our land, and only green manure (from the "favino" plant) is used as fertilizer.
The olive harvest usually takes place between the last week of October and the first week of November. The olives are picked by hand and put into shallow plastic crates with holes in them, then taken to the mill, where they are crushed on the same day they are harvested.
Even the mill (which serves a number of olive oil producers and runs on a continuous cycle) must meet organic standards. The unfiltered oil is put into stainless steel vats which are sited in cool places in Cerchiara di Calabria. It is left to decant naturally, then bottled.
